Cherry pies are two things: incredibly delicious to eat and incredibly messy to make. But we’re not about to let a few cherry-stained fingers stop us from baking up these sweet treats. Here’s how to do it with just five ingredients.
What you’ll need: 4 cups cherries, 1 cup sugar, 2 tablespoons cornstarch, ½ cup water and 2 pie dough crusts (store-bought or homemade)
Step 1: Preheat the oven to 375°F.
Step 2: Pit the cherries using a single chopstick. Take the smaller end of the chopstick, place it on the stem end of the cherry and push out the pit.
Step 3: In a medium saucepan, mix the pitted cherries with the sugar, cornstarch and water. Cook over medium-low heat until thickened, about 5 to 10 minutes, stirring occasionally. Remove from heat.
Step 4: Combine the pie dough crusts and roll out on a floured surface. Using a 3-inch cookie cutter, cut out 12 small rounds. Prepare a 12-cup muffin pan (or a 12-cup mini tart pan); lightly grease the cups if you’re not using a nonstick pan. Gently press the pie dough rounds into the bottom of each muffin cup and fill each with the cherry mixture. Bake for 25 to 30 minutes until the pies are golden brown. Cool and serve.
