Monday: 15-Minute Cheater’s Pad Thai

We don’t know about you, but when we order delivery from our favorite Thai spot, it definitely takes longer than 15 minutes to arrive. This protein-packed dish is cooked in a single skillet (and in a fraction of that time).

Tuesday: Tomato Salad with Grilled Halloumi and Herbs

Thanks to squeaky, tangy halloumi cheese, this elegant, seven-ingredient dish is more satisfying than you might expect. Serve it with crusty bread, pasta, rice or greens to make it even more filling. If you can’t find satisfactory tomatoes in the dead of winter, use an equal weight of cherry tomatoes.

Wednesday: Easy Stir Fried Rice Cakes with XO Sauce

Is it just us, or are rice cake stir fries all over your TikTok For You page lately too? Like tofu, they absorb the flavors of whatever they’re prepared with. Here, they’re cooked in XO sauce, a spicy seafood condiment that’s beloved for its sweet, smoky, umami-rich taste.

Thursday: 20-Minute Mushroom Stroganoff

Jamie Oliver’s vegetarian twist on beef stroganoff will win you over at first bite. It’s delightfully tangy, thanks to capers, cornichons and sour cream. Don’t stress over the quick flambé—it’s an easier task than you think.

Friday: 20-Minute Paleo Egg Roll in a Bowl

Nothing tops a glistening, crispy, filled-to-the-brim egg roll—but this lightened-up version comes pretty close. Without the wrapper, you’re left with filling protein and savory veggies. Feel free to serve it over rice if you aren’t on a Paleo diet.

Saturday: One-Pot Tomato Basil Pasta

Things we love: pasta. Things we could live without: waiting for water to boil. Luckily, the spaghetti and fresh tomato sauce are cooked together in one pot instead of separately, resulting in a richer flavor and more decadent texture. Pass the Parm, please.

Sunday: Spicy Shrimp Tacos with Mango Salsa

Prepare the salsa ahead and this dish will come together in 10 minutes flat, since all you’ll need to do is sauté the quick-cooking shrimp and toast the tortillas. Bonus points for serving the tacos with fresh mango guacamole.
