Here’s What to Cook Every Night This Week (December 30 to January 5)
You’ve eaten all the pie, your relatives are finally gone and you’re gearing up to celebrate the New Year. Cooking dinner? Yeah, it’s kind of an afterthought right now. Luckily, we’ve planned out seven amazing dinners for you, shopping list included. Here’s what to cook this week.
2 red bell peppers
One 8-ounce bag frozen chopped spinach
1 cup fresh basil leaves
4 garlic cloves
1 medium red onion
1 pint cherry tomatoes
1 pound sweet potatoes
1 large shallot
2 tablespoons fresh cilantro
1 bunch arugula
2 cups cremini mushrooms
Two 2-inch-thick bone-in pork chops (about 1¼ pounds)
1 pound ground spicy Italian sausage
1½ to 2 pounds raw chicken sausage
1 pound boneless, skinless chicken thighs
2 tablespoons unsalted butter (preferably grass-fed)
16 ounces whole-milk ricotta cheese
2 cups shredded Gouda cheese
8 ounces fresh mozzarella cheese
¼ cup crumbled cotija cheese
4 cups whole milk
3 tablespoons butter
¼ cup cream cheese
3 cups cheddar cheese, grated
1 cup plain whole Greek yogurt
One 1-pound box jumbo pasta shells
1 pound orecchiette
1 cup uncooked spelt
Two 28-ounce cans crushed tomatoes (such as San Marzano or Pomi)
2 cups low-sodium chicken broth
Two 14.5-ounce cans diced tomatoes, with their juices
¼ cup homemade or store-bought salsa
Pantry Ingredients: Ground cumin, chili powder, paprika, dried oregano, cacao powder, cinnamon, freshly ground black pepper, coarse sea salt, extra-virgin olive oil, crushed red pepper flakes, kosher salt, raw coconut oil, brown rice flour
Monday: Spinach and Three-Cheese Stuffed Shells
It’s not every day that we dig into a melty skillet full of cheesy, meaty pasta (although we can dream). So when the occasion arises, we’re going all out. Come on, it has three types of cheese!
Tuesday: Cast-Iron Pork Chops with Cacao-Spiced Rub
We’re not always up to cook a big cut of meat at home—it’s kind of intimidating, no? But Torie Borrelli’s The Mexican Keto Cookbook includes a cast-iron pork chop with cacao-spiced rub that’s too good to resist…not to mention a breeze to make. Your New Year’s Eve guests will be majorly wowed.
Wednesday: Eggs Baked in Avocado
You spend all of New Year’s Day in your pj’s, so why not have breakfast for dinner? These adorable little avocado egg cups will hit the spot after a long night of sipping (fine, gulping) Champagne.
Thursday: One-Pot Mac and Cheese
It’s your first day back at work after the holidays, and forget cooking—you barely feel like rolling out of bed. Lucky for you, this mac and cheese is ready in half an hour and uses only one dish.
Friday: Chicken Sausage, Spelt and Pepper Skillet
If you’ve never had spelt before, you’re in for a treat. The nutritious grain is nutty, chewy and a little bit sweet—not to mention packed with protein and fiber.
Saturday: Chicken Kebabs with Garlic Lemon Yogurt
Don’t skip the cherry tomatoes, dipping sauce and mint—they come together while the chicken is marinating and make this recipe a complete meal.
Sunday: Sweet Potato Rösti with Fried Eggs and Greens
Not familiar with a rösti? It’s kind of like a potato pancake or a latke. Here, sweet potatoes add flavor, color and extra nutrition. And you can totally skip the fried egg if you want to make it vegan.
