18 Insomnia Cookie Flavors, Ranked and Reviewed by a Food Editor

6. Pumpkin Pie Cookie

  • What It Is: pie crust cookie topped with spiced pumpkin pie filling, whipped cream and cinnamon, served cold
  • Price: $6

I appreciated the festive aesthetic of this cookie; it really looked like a teeny-tiny Thanksgiving pie. The bready, buttery base certainly gave pie crust vibes. My main bone to pick with the cookie was its fragile, crumbly texture that felt like it could break in my hand at any moment. The topping tasted like it was made with real pumpkin, but something about the way it was spiced imparted a bitter, too-earthy finish that sort of spoiled the experience for me. Overall, this cookie lived up to its name, but I wouldn’t feel inclined to eat more than a couple of bites.

5. Molten Lava Cookie

  • What It Is: dark chocolate cookie filled with hot fudge and sprinkled with confectioners’ sugar
  • Price: $5

If you’re someone who wants to be knocked over the head with rich, bold chocolate in all its forms, this one’s for you. That’s not me when it comes to sweets, but I still appreciated the depth of this Crumbl cookie. Even more so, I liked that the fudge interior was thick and contained rather than saucy and runny. Not only did it make eating it mess-free, but it also brought some condensed milk-like chew to the treat, which reminded me a lot of Brazilian brigadeiro. Again, I wouldn’t be able to eat more than two mouthfuls of this one, but they’d be enjoyable nonetheless.

4. Confetti Cake Cookie

  • What It Is: sugar cookie with confetti sprinkles inside, topped with pink vanilla cream cheese frosting and confetti sprinkles
  • Price: $5

This cookie was tasty, albeit incredibly sweet. It’s a more whimsical riff on the brand’s signature Original Pink Sugar Cookie, featuring a sprinkle-dappled base topped with pink cream cheese frosting in place of Crumbl’s pink almond frosting. It looked very appetizing and Insta-worthy. Upon trying it, I was struck by the texture of the frosting. It was very sweet with slight tang, thanks to the cream cheese, but the consistency was almost sticky, like the thin glaze you find on holiday sugar cookies, only much greater in amount. The sprinkles brought thin crispness to the otherwise thick, lowkey overwhelming confection.

3. Triple Berry Shortcake

  • What It Is: vanilla shortcake layered with fresh whipped cream and triple-berry jam, served cold
  • Price: $6

Hot take: Single-serve cakes should be more of a thing. The layers made for a balance bite, especially since the whipped cream was so light, clean and simple without being cloying. The jam was bright and tart, countering the sweetness of the dessert. However, it was very seedy, and I would’ve enjoyed it a bit more if it had been more thoroughly strained. I didn’t expect to like the outlier so much, and I’d say it’s worth the buy…but does anyone go to Crumbl for cake? (Someone must.)

  • What It Is: chocolate cookie with Oreo cookie pieces and peanut butter chips inside, topped with peanut butter mousse and a mini Oreo cookie
  • Price: $6

I’m not a chocolate dessert person, so when I’m going back for seconds, I know it’s superb. The peanut butter mousse was the highlight of this Crumbl cookie, with its fluffy, aerated texture and sweet-and-salty flavor profile. Each bite felt impeccably balanced, even though the cookie was bordering on excessively decadent. (The nutty PB chips helped with that.) Personally, I wouldn’t be able to eat the entire cookie in one sitting. However, I would be happy to eat 500 mini Oreos dunked in the mousse.

1. Semisweet Chocolate Chunk

  • What It Is: chocolate chip cookie with semisweet chocolate chunks and flaky sea salt
  • Price: $5

The texture was equal parts crisp and tender, signaling that it was likely freshly baked before being delivered. I’d venture to say that chewy and crunchy cookie lovers could get behind this brown sugar-kissed delight. (It’s similar to Levain’s famous cookie, minus the nuts and super-gooey center.) The salt could have been a bit more prominent for contrast, and it tasted straight-up sweet to me rather than semisweet (perhaps it was the milk chocolate variety I tasted?). But this variety still took the cake—er, cookie.
