Just Started Keto? Chipotle Now Has New Cilantro-Lime Cauliflower Rice on the Menu

It’s no secret that Chipotle is one of the healthier fast-casual options around. Thanks to their quality ingredients, lifestyle bowls modeled after popular diet plans and legendary guacamole, it’s pretty easy to indulge without totally overdoing it. But if you’re on keto or another low-carb diet, Chipotle’s famous cilantro-lime rice is off the table. Or rather, it was off the table—you can now substitute cauliflower rice for a limited time.

Chipotle announced the plant-based menu addition yesterday, assuring us that the cauli rice is compliant with keto, Whole30, Paleo, vegetarian and vegan diets. Cauliflower rice has been in the works for a long time, as it was tested in select locations in early 2020 after being commonly requested by customers in market research. It’s seasoned with cilantro, lime juice and salt like the regular rice, but boasts 4 grams of net carbs per serving instead of 39 grams.

Now you can beef up your lifestyle bowl instead of counting on greens alone to hold you over, while also staying in ketosis. It’ll cost you $2 extra to try it out, but citrusy cauli rice sure beats salad. Plus, what’s two more dollars when you already know you’re going to end up springing for guac?
