Ina Garten is no stranger to a bar cart. (Remember when she shared that video of her making a giant cosmopolitan a few weeks into the pandemic?) The latest recipe the Barefoot Contessa posted may be her easiest yet: the raspberry royale from her cookbook, Barefoot in Paris. One sip, and it just might become your new go-to summer cocktail.

“There’s always a reason to celebrate when it’s the weekend!” Garten captioned the Instagram video. “Making a Raspberry Royale is simple: Pour 1 teaspoon of red raspberry liqueur into each Champagne glass. When guests arrive, pop the cork and fill each glass with Champagne. I don’t do it here, but you can also add 2 or 3 raspberries as garnish. I love a drink that looks elegant but it’s so easy to make!”
It seems to be a seasonal play on the kir royale, a French cocktail made with bubbly and blackcurrant liqueur, aka crème de cassis. You can riff on her version even further by substituting prosecco, cava or whatever sparkling white (or rosé) is in your fridge for Champagne. You can also garnish it with fresh mint or basil, if you want to go beyond berries for the presentation. (Citrus peel would be nice, too.) As for the liqueur, Chambord is arguably most ubiquitous, but you could also try Giffard Crème de Framboise or Menaud Camerise Berry Liqueur.

Ingredients
- 1 teaspoon raspberry liqueur
- Champagne
- Fresh raspberries, for serving
Directions
1. Add the raspberry liqueur to the bottom of a Champagne flute or glass.
2. Pour Champagne to the top. Garnish with fresh raspberries if desired.
