But first, what is ceramic cookware?

Ceramic cookware isn’t made entirely from ceramic. It’s metal cookware made with a ceramic nonstick coating that’s slick, scratch-resistant and non-reactive, but is considered safer to cook with than the former nonstick darling Teflon (aka PFTE or polytetrafluoroethylene), which has been found to contain unsafe chemicals like PFOA (perfluorooctanoic acid) that can leech into food.

What are the benefits of ceramic cookware?

Ceramic cookware is just as slippery as traditional nonstick materials, but it has other benefits, too.

  • It’s scratch resistant. As long as you don’t take a metal utensil to the surface, ceramic cookware is very resilient against knicks and scratches. (It won’t last forever like stainless steel or cast iron, though.)
  • It’s easy to clean. While handwashing is usually recommended for ceramic cookware, it’s as easy as wiping with a nonabrasive sponge.
  • It’s safe for high temperatures. We wouldn’t recommend blasting your burner on high heat, but ceramic cookware can typically withstand higher temperatures than older nonstick surfaces. (And often, it’s oven safe.)

Is ceramic cookware better than other types of cookware?

That really depends. Many brands make claims that their ceramic coating is “clean” or “healthy,” but that language can mean many different things (and besides, PFTE coatings no longer contain the harmful PFOAs they used to). Additionally, ceramic cookware will never last as long as cast iron, carbon steel or even Teflon—it degrades over time with exposure to heat. It’s less about being better than other types of cookware than being good at specific tasks: Ceramic cookware is easier to clean than stainless steel or cast iron, and it’s much more nonstick.

How to care for ceramic cookware:

  • Don’t use metal cooking utensils, which could scratch the coating.
  • Handwash whenever possible since this is gentler than a dishwasher cycle.
