Frozen Berry Bites

Before you make that kitschy flag cake (again) this Fourth of July, consider this light, refreshing, gut-friendly frozen berry bites recipe. It only requires four ingredients, none of which need any cooking or baking. (Good looking out, freezer.) It'll cool your guests down on scorching hot days and balmy nights alike. Most importantly, it's pretty healthy and easy on the stomach compared to other summer desserts.

The recipe calls for blueberries and strawberries coated in a citrus-kissed yogurt, but you can also add raspberries or blackberries to the mix, too. After a trip to the freezer, the exterior turns creamy and frosty without feeling as heavy as ice cream. Better yet, it's easy to enjoy on the move—you know, like when you're walking from the kitchen to the patio to the pool during the annual neighborhood BBQ. 

You can use sweetened or unsweetened vanilla yogurt, depending on how nutritious you're feeling. If you're sensitive to dairy, feel free to substitute lactose-free or plant-based yogurt for the standard. Either way, these berry bites will keep you cool and satisfy your sweet cravings.

Ingredients

1 pint blueberries

1 pint strawberries

2 teaspoons freshly squeezed lemon juice

8 ounces vanilla yogurt

Directions

1. In a large bowl, carefully mix the berries, lemon juice and yogurt together. (Be gentle; you don’t want any berries to get squished.)

2. Scoop out the yogurt-coated berries in batches and place them on a parchment-lined baking sheet with some space between each berry.

3. Transfer the baking sheet to the freezer. Freeze the berries for two hours before serving.
