Dare I say, this almost tastes like…pizza?
Mild mozzarella, juicy tomatoes and fresh basil are a timeless combination. But did you know that the caprese treatment works with other fromage, too? Case in point: the caprese cottage cheese toast from Jessica Merchant’s new cookbook, Easy Everyday.
“When I said I love to eat cottage cheese in a savory manner, this is exactly how,” Merchant writes. “Burst tomatoes, fresh basil, balsamic drizzle, some flaky salt. Done. Sold. Sign me up. Dare I say, this almost tastes like…pizza? A thick slab of sourdough bread is required for this recipe, and then you can pile on your favorites.”
Feel free to substitute regular honey for hot honey, if you’re spice-averse. You can also use whatever bread you have on hand, or even substitute summer strawberries for tomatoes. Plus, you can quickly cook the produce ahead and keep it in the fridge until you’re ready to assemble and serve. How’s that for meal prep?

1 tablespoon extra-virgin olive oil
2 cups cherry tomatoes
2 garlic cloves, minced
1 teaspoon sugar
Kosher salt and freshly ground black pepper
2 slices sourdough bread, toasted
1 cup cottage cheese, divided
¼ cup chopped fresh basil
2 tablespoons balsamic glaze
1 tablespoon hot honey
1. Heat the olive oil in a skillet over medium heat. Add the tomatoes, garlic, sugar and a big pinch of salt and pepper. Cook, shaking the pan and stirring often, until the tomatoes burst and become almost saucy, 10 to 12 minutes. Turn off the heat.
2. Spread each slice of toasted sourdough with ½ cup cottage cheese. Sprinkle on some salt and pepper. Top the cottage cheese with the tomatoes. Add the fresh basil. Drizzle the toast with the balsamic and hot honey. Serve.
