Pancakes? Yawn. An omelet? Boring. Give your brunch guests what they want: Sarah Copeland’s bacon, kale and egg grandma pizza. Pair it with a Bloody Mary. Or a mimosa. Or one of each.

Baked Feta with Dill, Caper Berries and Citrus

“Baked feta is a dish you can—and should—learn to make by heart,” Copeland tells us. “This grazing-style dish is a filling lunch or a thrilling first course, served with toasted pita.” It serves four, but we’re not going to lie…we could easily finish this all by ourselves.

Shaved Moroccan Carrot Toast

Step aside, avocado toast. Copeland has just introduced us to one of our new favorite dishes. Meet shaved Moroccan carrot toast, a tasty (and beautiful) dish that’s ready to eat in about 10 minutes.

Yellow Tomato Gazpacho

The very best part about this stunning dish? You can prep everything the night before, then blend the ingredients and put them all together in less than 10 minutes, right before serving.

Spring Crudités with Romesco Sauce

Copeland admits that “a true Catalan romesco sauce—with freshly roasted red peppers, garlic, bread crumbs and olive oil—requires a bit of time.” But the good news? “Once you’ve made it, all you need is a bunch of gloriously fresh vegetables to create a centerpiece for any occasion.”
