Back-to-school season is just around the corner, so you're going to need portable, satiating breakfasts, snacks and lunches to keep you and yours on schedule. Enter this recipe for baked oatmeal squares, which is easy to prepare in advance of early mornings and long days. Better yet, they're made with gut-friendly, easy-to-digest ingredients and satisfy a sweet craving without bogging you down with sugar.

Whether you're packing one in your kid's lunch box or snacking on one while you're en route to the office, this grab-and-go gem has you covered. Tender, chewy, and slightly sweet, the bars are made with fresh produce (hi, bananas and blueberries) and a number of pantry staples that you likely already have on hand.

Special components include chia seeds, which are loaded with fiber, antioxidants and nutrients, and lactose-free milk to cater to sensitive tummies. The rest is basic, like oats, maple syrup, cinnamon and vanilla extract. Feel free to add peanut butter chips, chocolate chips, chopped nuts or shredded coconut to the mix once you have the recipe down.

Ingredients

2 ripe bananas

½ cup lactose-free milk

¼ cup maple syrup

1 teaspoon vanilla extract

2 cups rolled oats

2 tablespoons chia seeds

1 teaspoon ground cinnamon

½ teaspoon baking powder

Pinch kosher salt

⅓ cup blueberries

Directions

1. Preheat the oven to 350°F and line an 8-inch-by-8-inch pan with parchment paper.

2. In a large bowl, mash the bananas, then whisk in the milk, maple syrup and vanilla. Stir in the oats, chia seeds, cinnamon, baking powder and salt. Gently fold in the blueberries.

3. Pour the mixture into the pan, then smooth out the top with a knife or icing spatula. Bake until it's set and slightly golden, 25 to 30 minutes

4. Cool the bake completely, then slice it into squares.
