Zaxby’s New Lemon Pepper Wings Proves It’s the Most Underrated Chicken Chain Around

While every other fast food joint scrambles to serve tortilla-enrobed chicken tenders to combat the return of the McDonald’s Snack Wrap, one chain is choosing to zag. Zaxby’s got its start by making tenders the focus of its entire menu back in 1990 (a radical idea at the time), and this summer, the brand is drawing inspiration from its Georgia roots with the launch of lemon pepper wings.

Lemon pepper wings are an Atlanta staple (and not just because FX’s Atlanta popularized ordering ‘em “lemon pepper wet”), and people have strong opinions about the best ones. They need a citrusy tang with a little kick, and shatteringly crisp skin that gives way to a juicy wing. Could a fast food joint really pull that off, when their whole goal is getting people in and out of a drive thru in record time?

As a food editor, I needed to know, so I hit up my nearest Zaxby’s to try them out.

Friends, they did not disappoint.

You can order the lemon pepper seasoning on boneless wings, chicken fingers or traditional wings, or as a filet on a lemon pepper chicken sandwich (with prices ranging from $10.79 to $13.89 per meal). I opted to try them as the great city of Atlanta intended: traditional, bone-in wings.

I worried the wings would get soggy on the drive home, but the skin stayed crisp. There was a zesty, citrusy note on the front end, with slight pepper notes, and truly succulent meat. I could’ve gone for a more intensely peppery flavor, if I’m honest, but I was very pleasantly surprised by how hearty the wings and drumsticks were, and that they didn’t dry or sog out. (And for the spice-averse, this is a great pick, as it’s not spicy at all. Just tangy.)

Served with buttery Texas toast and thick crinkle cut fries, the Traditional Wings meal was seriously filling. If you order it, you’ll need to ask for a side of ranch or Zax sauce (a tangy, peppery sauce that’s kind of like an aioli-esque take on Thousand Island). It’s a must for dipping the wings and fries.

That said, as great as the wings are, I kind of missed vegetables. And Zaxby’s has some of the best fast food salads, er zalads, around, so I’d recommend getting an order of lemon pepper wings to share, then trying the Cobb Zalad or—if you can handle some really funky blue cheese—Blue Salad. Both are loaded with toppings: The Cobb features the traditional tomatoes, cheese, bacon, hard-boiled egg and cucumbers, along with fried onions, carrots, red cabbage and fried or grilled chicken, and the Blue combines mixed greens with fried onions, carrots, red cabbage, chicken, blue cheese and an optional Buffalo Garlic Blaze drizzle. (If you go Blue, get the drizzle. It makes the meal.)
