The Genius Way to Make Pasta Without Water

A few months ago we figured out that you could cook spaghetti in red wine and it totally changed Italian night in our house. Our newest wine-infused-pasta discovery? This Paprika White Wine Bucatini recipe from the gorgeous blog I Will Not Eat Oysters. Now we’re drooling.

Basically, after sautéing onions and Italian sausage in a large pan, you add chicken stock, bucatini and, a little later, a whole lot of white wine. The result is reminiscent of risotto and gets topped liberally with Parmesan, pepper and chives. 

Heads up that you’ll need almost a whole bottle of wine for the pasta, so it’s best to pick up another (couple) for enjoying alongside the meal.
