14 ounces mixed mushrooms

Monday: 20-minute Mushroom Stroganoff

Rich and creamy stroganoff is just what we crave on a chilly winter evening, but it’s not exactly weeknight-friendly. This lightened-up vegetarian version from Jamie Oliver’s new cookbook, Ultimate Veg, checks the same comfort-food boxes and happens to take 20 minutes from start to finish.

Tuesday: Keto Instant Pot Sausage-kale Soup

Thanks to the Instant Pot, this recipe is adaptable and quick. So throw in whatever veggies you have on hand. (But don’t skip the cauliflower. Trust us on this one.) 

Wednesday: Parmesan-ranch Chicken Thighs

News flash: Roast chicken doesn’t have to be boring. So instead of throwing the whole bird into the oven again, get creative and try some thighs. They’re delicious and almost impossible to overcook (unlike breasts). 

Thursday: Gnocchi Mac And Cheese

We love gnocchi on its own, but cover those light pillows of dough (store-bought or homemade) in a creamy cheese sauce and you’ve got pure magic.

Friday: Cheater’s Sicilian-style Pizza With Jalapeños And Honey

This ridiculously easy shortcut pizza is topped off with layers of red sauce, mozzarella, pecorino and high-quality pepperoni that curls into little cups when you bake it. Can we get an amen? 

Saturday: Slow-cooker Korean Short Rib Tacos

It’s the last winter weekend to hang around the house in a heap of blankets, so dive into a fun cooking project and fill your home with the most delicious smells. 

Sunday: The Ultimate Chicken Potpie

OK, this guy bakes in the oven for 90 minutes, but there’s only 15 minutes of prep time. Pop it in, watch a movie and it’ll be ready before you know it.
