Monday: Vegetarian Thai Pineapple Forbidden Rice

Coterie member Monique Volz is inspiring us to start out the week healthy. Case in point: This vegetarian forbidden rice bowl. It packs in plenty of protein from eggs and edamame, plus heaps of fresh veggies.

Tuesday: One-pot Sesame Chicken

Serve up a little sweet and a little savory with this quick and easy sesame chicken dish. Like most of our weeknight favorites, it uses only one pan.

Wednesday: Oven-roasted Teriyaki Pork Tenderloin With Maple-ginger Glaze

Marinate the pork in gluten-free maple-ginger glaze the night before, so dinner prep will take just 20 minutes. (Thanks for the tip, Coterie member Phoebe Lapine.)

Thursday: Ginger-pineapple Shrimp Stir-fry

The extra pineapple hanging out in your fridge doesn’t need to go in a smoothie. Use it as a sweet addition to tonight’s dinner. Close your eyes, and you’re at the beach.


Friday: Soft Polenta And Mushroom Bowls

FYI, dairy-free polenta is a game changer. It gets its creaminess from a dollop of avocado oil and its bold flavor from crispy mushrooms and red onions.

Saturday: Kabocha Kale Soba Salad

Keep Saturday night’s dinner light. We love the squash and kale that Coterie member Gena Hamshaw added, but you can easily sub in any other veggie you have on hand.

Sunday: Coconut Chicken Soup (tom Kha Gai)

It’s comfort-food time. Known in Thailand as Tom Kha Gai, this coconut chicken soup is filled with earthy umami flavors, hints of lemongrass and a welcome kick, thanks to the red curry paste.
