This beyond-easy recipe for zesty chargrilled broccolini, from Megan Hallett and Nicole Jardim’s cookbook, The Happy Balance, is proof. It’s practically effortless and packed with bright flavor...not to mention really good for you.
“While steamed broccoli isn’t one of the most appetizing side dishes, there are many other ways you can make this fabulous green taste incredible,” writes Hallett. “By chargrilling in a drizzle of avocado oil, you’re getting a dose of healthy fats, while a grating of lemon zest transforms the flavor.”
The real cherry on top? It’s ready in ten minutes. We never thought we’d have a crush on a vegetable, but here we are.
Avocado oil, as needed for cooking
10½ ounces (300g) broccolini
1 lemon
Kosher salt and freshly ground black pepper
Sunflower and pumpkin seeds, to serve
1. Set a griddle or grill pan over high heat and add a drizzle of avocado oil. Place the broccolini in the pan so that the grill marks will run horizontal. Cook for 5 minutes, flipping halfway through, then grate the zest from the lemon on top and season with salt and pepper.
2. To serve, add a squeeze of lemon juice and the sunflower and pumpkin seeds.
