For everyone else, the low-carb, high-fat snack (aka “fat balls”) just might be the energy-boosting, hunger-curbing little treat you’ve been waiting for. Make these strawberry keto fat bombs in a big batch and indulge when you get a craving for something sweet.
1 cup sliced strawberries
2 tablespoons honey
1 teaspoon pure vanilla extract
6 ounces cream cheese, at room temperature
4 tablespoons unsalted butter, at room temperature
1. In the bowl of a food processor, puree the strawberries, honey and vanilla until relatively smooth.
2. Add the cream cheese and butter; and mix until smooth.
3. Scoop the mixture into ice-cube trays or muffin cups. Freeze until firm, at least 2 hours.
