Let’s face it: When you’re on the keto diet, most of your time is spent meal-prepping, cooking and thinking about what you’re going to eat for lunch. Never fear, the world’s fastest, most satisfying salad is here, courtesy of Dana Carpender, author of The Keto for One Cookbook. It works fabulously with leftover steak and fixings from the salad bar. And if you’re keto-ing solo, here’s the best news: This satisfying lunch or dinner is portioned for one.

4 ounces (115g) leftover steak, sliced
2 cups (94g) chopped romaine lettuce
2 tablespoons (30ml) balsamic vinaigrette
1 small tomato, cut into wedges (or 3 to 4 cherry or grape tomatoes, halved)
1 tablespoon (10g) minced red onion
3 tablespoons (23g) crumbled blue cheese
1. Thinly slice the steak across the grain.
2. Place the romaine lettuce in a mixing bowl, drizzle with the balsamic vinaigrette and toss until it’s well coated. Pile the salad onto a plate.
3. Scatter the tomatoes and red onion over the lettuce. Lay the steak slices over that and top with the blue cheese.
