Just when we didn’t think it was possible to reinvent the wheel on something as classic as oatmeal, the interwebz introduce us to zoats, a kinda sweet, kinda savory combo of zucchini and oats.
Besides the fact that it’s a fun word to say (repeat it ten times fast), it’s just as delicious--and even healthier--than the original.
So what is it exactly? Your regular oatmeal mixed together with thinly shredded slices of zucchini. Sounds weird, but cooked down, it adds a hearty flavor and tons of extra fiber to your bowl--without the extra carbs or calories. Like adding a handful of spinach to your morning smoothie, it’s an easy way to up your veggie intake, too.
And how do I make it? We love this recipe from PopSugar that uses a cup of shredded zucchini, plant-based protein powder and mashed banana for a taste that’s both sweet and fresh while still super filling.
