Rose Rock Candy Is Our New Favorite (and Easy-to-Make) Dessert
Oooh, it’s so sparkly
Bubble Tape, candy cigarettes, Atomic Fireballs and, of course, rock candy: Our favorite childhood memories are defined by these sugary treats. So we were psyched when we discovered this sparkly rock candy recipe from A Beautiful Mess. Here’s how you make it…
What you need: A cookie sheet lined with aluminum foil, a medium saucepan, a candy thermometer, white sugar, light corn syrup, pink food coloring, a spatula, rose extract, a hammer and (we saved the best for last) edible gold sprinkles.
Step one: Combine 1 cup water, 3 3/4 cups sugar and 1 1/2 cups light corn syrup in a saucepan and cook over medium heat. Stir until the sugar dissolves.
Step two: Insert the candy thermometer and stop stirring (seriously, don’t do it). Let the mixture come to a boil until it reaches 300˚F.
Step three: Quickly add a few drops of food coloring and rose extract, then mix until the concoction turns light pink.
Step four: Pour the pink goo onto the cookie sheet, spreading it evenly with a spatula. Wait about ten minutes to let the candy cool, then sprinkle on gold embellishments. Tap them into the sugar carefully with the back of a spoon.
How to serve: After the candy has completely set (about 45 minutes), shatter it into sparkly, bite-size pieces with a clean hammer.
