Vegetable Black Pepper Brown Rice Fried Rice

So easy, it’ll quickly become your favorite weeknight meal.

Fried rice is one of the best things to make at home because you can customize it however you want, and it’ll be delicious every time. This version is a nod to one of our favorite food trends from the past decade: ancient grains. Here, we use Simple Truth Organic Black Pepper 100% Whole Grain Brown Rice with Ancient Grains as the base and add in a variety of fresh veggies and scrambled eggs. Our secret tip: Let the rice cook on the bottom of the pan for a few minutes to crisp up.

Ingredients

2 tablespoons toasted sesame oil

2 garlic cloves, minced

2 scallions, minced

One 1-inch piece Simple Truth Organic Ginger, grated

1 Simple Truth Organic Red Bell Pepper—stemmed, seeded and diced

1 cup snow peas, cut into 1-inch pieces

½ cup Simple Truth Frozen Green Peas, defrosted

One 8-ounce container Simple Truth Organic Black Pepper 100% Whole Grain Brown Rice with Ancient Grains, prepared according to package instructions

3 to 4 tablespoons Simple Truth Organic Soy Sauce

2 tablespoons rice vinegar

3 large Simple Truth Organic Cage Free Eggs, beaten

Thinly sliced scallions and sriracha, to serve (optional)

Directions

Heat a large nonstick skillet over medium-high heat and add the sesame oil. Add the garlic, scallions and ginger and cook until fragrant, about 1 minute. Add the bell pepper and snow peas and cook until just shy of tender, about 3 minutes.

Add the rice and cook without moving to allow the rice to get a little crispy, about 4 minutes. Break the rice up with the back of a wooden spoon and continue to cook to warm through, about 2 minutes more. Add the peas during the last minute of cooking.

Make a well in the skillet and add the beaten eggs. Allow the eggs to set for about 2 minutes, then scramble them into the rice.

Pour in the soy sauce and rice vinegar to taste. Serve garnished with thinly sliced scallions and sriracha, if desired.
