Roasted Asparagus Salad with Boursin Cheese

Looking for a side dish that’s quick to whip up and doesn’t sacrifice flavor? This is it. Roasted asparagus is mixed together with lemon juice (and zest), dill, chives and packs a flavor with Boursin® Garlic & Fine Herbs Cheese all in under 25 minutes. Hint: It travels well, so pack it in your beach cooler for an after-swim meal.

Ingredients

1 bunch asparagus, ends trimmed, sliced into 2-inch pieces on a bias

2 tablespoons extra-virgin olive oil

Kosher salt and freshly ground black pepper

2 garlic cloves, minced

Zest and juice of half a lemon

1 tablespoon fresh dill, chopped

1 tablespoon fresh chives, chopped

Directions

1. Preheat oven to 400°F. Line a baking sheet with parchment paper. Spread the asparagus on the baking sheet, drizzle with olive oil and season with salt and pepper. Toss with the minced garlic. Roast until tender, 10 to 12 minutes. Let the asparagus cool completely.

2. Transfer the cooled asparagus to a bowl. Add the lemon zest and juice, and top with the dill and chives, followed by the Boursin Cheese. Serve chilled or at room temperature.

Note: To avoid sogginess and ensure that the asparagus stays crisp, keep a close eye on the oven and cook just until tender. You may need to adjust the cooking time given the thickness of your asparagus. If your asparagus is very thin, it may only take 7 to 9 minutes; if very thick, 12 to 15 minutes.
