Pineapple Kimchi Fried Rice

Average (0)

What to do with leftover rice? Turns out, cold day-old rice is required for making fried rice (who knew?) and Beto Hernandez of @betoeats shows us how. As part of the Ziploc® #UnsealTheMeal TikTok challenge, Hernandez transforms leftover rice, pineapple, ham and mixed veggies into an inspired dish you’ll have on the table in minutes. Join the challenge and post your favorite leftover recipe using hashtag #UnsealTheMeal.

½ teaspoon olive oil

½ cup ham, chopped

½ teaspoon oyster sauce

2 teaspoon soy sauce

½ cup mixed veggies (corn, peas, carrots, and green beans)

⅓ cup pineapple chunks

⅓ cup kimchi

½ teaspoon garlic powder

½ teaspoon garlic salt

Pinch of salt

Freshly ground black pepper

1 cup cooked white rice (preferably day old rice)

1 egg

½ teaspoon rice vinegar

Pinch of sugar

1. In a large skillet, heat the oil over medium heat. Add ham, oyster sauce and 1 teaspoon soy sauce. Stir to coat the ham and sauté for 3-4 minutes.

2. Add mixed veggies, pineapple and kimchi. Season with garlic powder, garlic salt, salt and pepper. Cook until vegetables are tender, 5 minutes.

3. Add rice and one egg. Scramble the egg and mix in with vegetables, ham and other ingredients. Add rice vinegar, the remainder of the soy sauce and a pinch of sugar. Sauté on high heat for 1-2 minutes. Serve hot.
