Paleo Almond Butter Granola Bars

These little guys may be small, but they sure are mighty. Packed with good-for-you ingredients like raw nuts, coconut oil, raw almond butter and dried fruit, these Paleo-friendly granola bars are quickly replacing our go-to snack bars. Plus, with 19 grams of protein they’ll leave you satisfied (and not reaching for the potato chips).

Ingredients

Nonstick spray

2 cups raw almonds

2 cups raw cashews

1 cup raw pistachios

1 cup raw pumpkin seeds

¼ cup white sesame seeds

¼ cup black sesame seeds

1 teaspoon ground cinnamon

2 teaspoons pure vanilla extract

½ teaspoon kosher salt

2 tablespoons coconut oil, melted

2 large egg whites, lightly whisked

½ cup honey

½ cup unsweetened dried cherries

½ cup unsweetened dried apricots

Directions

1. Preheat the oven to 350°F. Grease a 9-by-13-inch casserole dish with nonstick spray. Line it with parchment paper and grease the parchment paper.

2. In a large bowl, mix together the almonds, cashews, pistachios, pumpkin seeds, white sesame seeds, black sesame seeds, cinnamon, vanilla and salt. Mix in the melted coconut oil, almond butter, egg whites and honey. Fold in the dried cherries and apricots.

3. Press the mixture evenly into the casserole dish. Transfer to the oven and bake until the nuts look lightly toasted, 20 to 25 minutes. Cool completely before cutting into 15 square bars.
