One Pot Pasta with Tomatoes and Shrimp

This pasta dish features fresh flavors like cherry tomatoes, shallots and lemon. 12 ounces Simple Truth Organic Spaghetti
2 shallots, thinly sliced
3 garlic cloves, sliced
1 tablespoon Simple Truth Organic Thyme
Pinch of Simple Truth Organic Crushed Red Pepper
2½ cups cherry tomatoes, halved
2 lemons, zested and juiced
4½ cups water
1 pound Simple Truth Peeled and Deveined Jumbo Raw Frozen Shrimp, thawed
Kosher salt and freshly ground black pepper
¾ cup Simple Truth Organic Grated Parmesan Cheese
¼ cup Simple Truth Organic Basil Pesto, to serve
In a large, high-sided sauté pan, add the pasta, shallots, garlic, thyme, tomatoes, red chili flakes, tomatoes, lemon juice and 1½ teaspoons salt. Add the water and bring to a boil over high heat.
Simmer uncovered, tossing the pasta frequently with tongs, until the pasta is al dente and the water has almost evaporated, 12 to 15 minutes. During the last 3 to 4 minutes of cooking, add the shrimp and toss until the shrimp are fully cooked—they should be pink and fully opaque. Season with additional salt and pepper if necessary.
Divide between bowls and garnish with Parmesan, lemon zest and basil pesto before serving.
