Grilled Southwest Chicken
We know what you’re thinking: Another grilled-chicken recipe? Yes, but hear us out. The marinade for this dish marries together all the bright, refreshing flavors of summer, starting with Dole® Canned 100% Pineapple Juice. Simply grill it up and serve with a side of colorful veggies.
3/4 cup Dole Canned 100% Pineapple Juice
1 tbsp lime juice
1 tbsp vegetable oil
1 tsp chili powder
1/2 tsp dried oregano leaves, crushed
1 clove garlic, minced
4 boneless, skinless chicken breast
1. Combine pineapple juice, lime juice, oil, chili powder, oregano and garlic in shallow glass dish.
2. Place chicken in dish, turn to coat. Cover; refrigerate 15 to 30 minutes.
3. Grill chicken, brushing occasionally with marinade 15 to 20 minutes or until chicken reaches 145°F. Discard remaining marinade.
