Grilled Herb Potato Salad
Love potato salad but can't stand the mayo? Try this grilled herb potato salad instead. Combine grilled Simple Truth Organic Red Gourmet Potatoes with red wine vinegar dressing, Unfiltered Extra Virgin Olive Oil, grainy mustard and fresh chives, dill and garlic. Garnish with chopped parsley to complete your dish.

2 pounds Simple Truth Organic Red Gourmet Potatoes
¼ cup Simple Truth Organic Unfiltered Extra-Virgin Olive Oil, divided
1 Simple Truth Organic lemon, zested and juiced
1 shallot, minced
2 tablespoons Simple Truth Organic Stone Ground Mustard
2 tablespoons Simple Truth Red Wine Vinegar
¼ cup Simple Truth Organic Chives, chopped
¼ cup Simple Truth Organic Baby Dill, chopped
¼ cup Simple Truth Organic Italian Parsley, chopped
1. Bring a large pot of salted water to a boil. Add the potatoes and cook until tender, 8 to 10 minutes. Meanwhile, place a large bowl of ice water next to the stove. When the potatoes are done, drain and immediately transfer to the ice water to cool to room temperature.
2. Meanwhile, lightly grease the grates of a grill or grill pan with olive oil, then preheat over medium-high heat. Drain the potatoes and pat dry. Slice the potatoes in half lengthwise and place in a medium bowl. Toss with 2 tablespoons extra-virgin olive oil and season with salt and pepper. Place the potatoes cut side down onto the grill and cook until charred, about 5 minutes per side. Transfer to a large bowl to cool slightly.
3. While the potatoes cool, make the dressing. In a small bowl, whisk together the lemon zest and juice, shallot, Simple Truth Organic Stone Ground Mustard, Simple Truth Red Wine Vinegar and remaining ¼ cup Simple Truth Organic Unfiltered Extra-Virgin Olive Oil. Season with salt and pepper.
4. Drizzle the dressing over the potatoes and gently toss to coat. Add the Simple Truth Organic Chives, Simple Truth Organic Baby Dill and Simple Truth Organic Parsley and stir again until everything is combined. Serve at room temperature.
