Take this tasty ginger carrot soup: It packs a ton of warming flavor but requires practically none of your time (or money). Sold.

4 servings

2 tablespoons extra-virgin olive oil

3 pounds carrots, peeled and chopped

1 yellow onion, sliced

Kosher salt and freshly ground black pepper

1-inch piece of ginger, peeled

6 cups vegetable broth

1 bunch cilantro

¼ cup pepitas

1. In a large saucepan, heat the olive oil over medium heat. Add the carrots and onion, season with salt and pepper and sauté until the onion is tender, about 5 minutes. Add the ginger and sauté for 1 minute.

2. Add the broth and bring the soup to a boil. Reduce the heat and simmer until the carrots are soft, about 20 minutes.

3. Working in batches, transfer the soup to a blender and puree until smooth. (Alternatively, use an immersion blender.) Garnish the soup with the cilantro leaves and pepitas.
