2 tablespoons extra-virgin olive oil

2 garlic cloves, grated

2 cups cauliflower florets (about ½ head cauliflower)

½ teaspoon crushed red pepper flakes

Kosher salt and freshly ground black pepper, to taste

Sabra Roasted Garlic Hummus

Warm pita bread, to serve

1. Preheat the oven to 400°F. Combine the olive oil and grated garlic on a baking sheet.

2. Add the cauliflower florets and toss to coat, spreading into an even layer. Season with salt, pepper and red pepper flakes, then transfer to the oven and bake until the cauliflower is deeply roasted and golden brown at the edges, 25 to 30 minutes, tossing halfway through. (Resist the urge to more than once, or the cauliflower won’t caramelize as deeply.)

3. Spoon the garlic roasted cauliflower atop Sabra Roasted Garlic Hummus and drizzle with more olive oil. Serve as is for a delicious side dish, or with pita as a snack.
