Cucumber Sushi Roll Ups

An elevated version of a classic veggie snack.

Gone are the days of cucumber slices dipped in ranch. These little roll ups are vegan and super easy to put together so they make for a healthy (and elevated) midday veggie snack. Thinly slice cucumbers and spread a thin layer of Simple Truth Plant Based Spicy Queso Style Cauliflower Dip and add julienned carrots and bell peppers. Roll it up and dip one side into chopped pistachios for a crunchy finish.


2 English cucumbers 

½ cup Simple Truth Plant Based Spicy Queso Style Cauliflower Dip

2 large Simple Truth Organic Whole Carrots, peeled and julienned 

1 Simple Truth Organic Red Bell Pepper—stemmed, seeded and julienned 

⅓ cup Simple Truth Raw Pistachios, finely chopped 


Using a Y-shaped vegetable peeler, peel the cucumber into long strips. Spread a thin layer of the cauliflower dip on each of the cucumber strips.

On the bottom third of each strip, place some carrot pieces and red bell pepper pieces. Roll up like a sushi roll with the spiral side up. Place the pistachios in a small bowl and dip the sushi pieces into the chopped pistachios for a crunchy finish.
