Chocolate Almond Butter Rice Cakes
Rice cakes get a bad rap because, well, they’re boring—except when you pair them with almond butter and chocolate. Mix Simple Truth Smooth No Stir Almond Butter with honey and cinnamon and spread on the rice cake. Then drizzle dark chocolate on top and sprinkle with cacao nibs and shredded coconut. Let it set in the freezer for the ultimate crunch.
1 to 2 tablespoons Simple Truth Smooth No Stir Almond Butter
1 teaspoon Simple Truth Organic Honey
Pinch of Simple Truth Organic Ground Cinnamon
1 rice cake
2 tablespoons Simple Truth Organic 72% Cacao Dark Chocolate Chunks
½ teaspoon Simple Truth Organic 100% Refined Liquid Coconut Oil
1 teaspoon cacao nibs or unsweetened shredded coconut
In a small bowl, stir together the Simple Truth No-Stir Creamy Almond Butter, honey and cinnamon. Spread onto the rice cake.
Place the dark chocolate chips and coconut oil in a small bowl and microwave at 30 second intervals, stirring in between until smooth.
Drizzle the chocolate on top of the almond butter and sprinkle with cacao nibs or shredded coconut. Freeze for 10 minutes to set before serving.
