Blueberry Waffle Casserole with Granola Topping

Whether or not you’re hosting Sunday brunch or just craving a decadent breakfast, this gluten-free waffle casserole is all you need. Simple Truth Gluten-Free Homestyle Waffles are baked with blueberries in a cinnamon-vanilla egg mixture and topped off with grain-free granola. Serve it up with a side of maple syrup.

Ingredients

Blueberry Waffle Casserole

1 tablespoon Simple Truth Organic Unsalted Butter, for greasing 

18 Simple Truth Gluten-Free Homestyle Waffles, toasted according to package instructions and cut into 2-inch pieces (11 cups total) 

2 cups fresh or frozen Simple Truth Organic Blueberries, thawed and drained if frozen

8 Simple Truth Organic Natural Cage Free Eggs

1½ cups Simple Truth Organic 1% Low Fat Milk

½ cup Simple Truth Organic Grade A Amber Color Maple Syrup, plus more to serve 

1 teaspoon Simple Truth Organic Ground Cinnamon

1 teaspoon Simple Truth Organic Madagascar Vanilla Extract

Granola Topping

2 tablespoons Simple Truth Organic Unsalted Butter, melted 

1½ cups Simple Truth Grain Free Original Granola 

Directions

Grease a 9-by-13-inch baking dish with butter. Place the waffle pieces in the casserole dish and sprinkle the blueberries throughout.

In a large bowl, whisk together the eggs, milk, cinnamon and vanilla until well combined. Pour over the waffle mixture and set aside to soak for 20 minutes. 

Make the Granola Topping: Meanwhile, preheat the oven to 375°F. Once the casserole has soaked, toss the butter with the granola and sprinkle on top of the waffles. Cover with foil and bake for 20 minutes then uncover and bake until eggs are set and top is golden brown, another 20 to 25 minutes. Cool for 10 minutes then serve with maple syrup.
