A warm afternoon calls for a refreshing drink, so we're teaming up with Aida Mollenkamp of Salt & Wind to perfect our cocktail game. While there's no denying that a classic Paloma is a thing of beauty, this latest version with blood-orange soda and crushed thyme is a bit swankier.


Ingredients

½ ounce freshly squeezed lime juice

12 sprigs fresh thyme, leaves removed and roughly chopped

1 teaspoon sea salt flakes

Ice

Directions

1. Combine the chopped thyme with the salt on a small plate. Using your fingers, crush the mixture until well combined.

2. Press half of a squeezed lime along the rim of a highball glass and roll the rim in the thyme salt.

3. Add a few ice cubes and a pinch of the thyme-salt mixture to the glass. Top with the tequila, lime juice and soda. Stir and then serve immediately.
