You know how the saying goes: Sugar and spice makes everything nice. This chili chocolate martini crafted with Baileys is one part dessert, one part Happy Hour cocktail. (But don’t worry, it won’t spoil your dinner.)
2 tablespoons sugar
¼ teaspoon cayenne pepper, plus extra for finishing
¼ cup Baileys Irish Cream
2 tablespoons vanilla vodka
2 tablespoons cocoa powder
2 tablespoons half-and-half
Ice, as needed
1. On a small plate, place a very damp paper towel. On another small plate, stir the sugar and cayenne together to combine.
2. Press the glass onto the paper towel to wet the rim, then dip it into the sugar-cayenne mixture. Set aside.
3. In a cocktail shaker, combine the Baileys with the vanilla vodka, cocoa powder, half-and-half and cayenne (to taste). Add a few ice cubes, and shake very well to combine.
4. Strain the cocktail into your prepared glass and serve immediately.
