Avocado Oil Salad Dressing

The perfect complement to an easy winter salad.

Not to be dramatic, but dressing can make or break a salad. Plus, finding the right balance of flavor and weight isn’t an easy feat. We like to think of this one as our goldilocks dressing recipe because it’s not too tangy, has just a touch of sweetness and doesn’t weigh down the actual salad because its base is Simple Truth Organic Refined Avocado Oil. Enjoy it over a winter salad of butternut squash, Honeycrisp apples, dried cranberries and toasted walnuts.

Ingredients

Dressing 

1 shallot, minced 

2 garlic cloves, minced 

2 tablespoons Simple Truth Organic Dijon Mustard

3 tablespoons Simple Truth Organic Raw Apple Cider Vinegar

1 tablespoon Simple Truth Organic Grade A Amber Color Maple Syrup

⅓ cup Simple Truth Organic Refined Avocado Oil

Kosher salt and freshly ground black pepper

Salad

One 5-ounce package Simple Truth Organic Power Greens

2 cups roasted butternut squash 

1 Simple Truth Organic Honeycrisp Apples, thinly sliced 

⅓ cup Simple Truth Organic Premium Sweetened Dried Cranberries

⅓ cup toasted Simple Truth Walnut Pieces, roughly chopped 

Directions

Make the Dressing: Place the shallot, garlic, mustard, apple cider vinegar, maple syrup and Simple Truth Avocado Oil in a mason jar. Season with salt and pepper, secure the lid and shake until well combined. (Alternatively, you can place the shallot, garlic, mustard, vinegar and maple syrup in a small bowl and whisk to combine. While whisking, slowly stream in the Simple Truth Avocado Oil until emulsified. Season with salt and pepper.)

Make the Salad: In a large bowl, add the mixed greens, roasted butternut squash, apple, cranberries and walnuts. Drizzle the dressing around the rim of the bowl and toss to evenly coat. Season with salt and pepper to taste and serve immediately.
