1 ripe avocado, diced
Juice of 1 lemon
¼ cup extra-virgin olive oil
Pinch cayenne pepper
Kosher salt and freshly ground black pepper
1. In a blender or food processor, puree the avocado, lemon juice and ⅓ cup water until combined.
2. With the motor running, add the olive oil in a slow, steady stream and puree until the mixture is thick and smooth.
3. Season the hollandaise with cayenne and salt and pepper and serve immediately.
