Meghan Markle Has *Thoughts* About Cheese Curds

Meghan Markle’s recipes for a cinnamon-whiskey cocktail, spaghetti alla chitarra and lemon olive oil cake have all gone viral in the past—and with good reason. (Trust us, we tested the first two for our YouTube series, Celeb Bites.) Not only are these dishes tasty, but they also feel on brand for Markle, given how classy-yet-approachable the Duchess is. Would you have guessed that she also loves poutine? It turns out she knows the key for making the cult-favorite Canadian dish at home.

Markle discussed what she eats in a typical day with Delish back in 2018. In addition to revealing her favorite dessert (wine) and her secret for grilling the perfect steak (spritz it with lemon juice before serving), she also shared her thoughts on preparing real-deal poutine.

“It’s got to squeak when you bite into it,” Markle told the publication. “Really. The cheese curds should make a squeaking noise when you bite into them or squeeze them. That’s how you know you’ve got the right kind.”

For the uninitiated, poutine is a Canadian dish of fries doused in brown gravy and topped with cheese curds. Markle should know a thing or two about the snack, considering she lived in Toronto for seven years while filming Suits.

Many home cooks may try skirting around the curds when making their own by substituting mozzarella cheese, but we’re betting Markle would argue that the curds are the most essential part. (With mozz in their place, the dish transforms into New Jersey’s cult-favorite disco fries.)

Markle also told Delish that fries are her go-to guilty pleasure. “I’m always hoping I’m having lunch with people, so we can share fries,” she said. “It’s its own food group for me.”

What can we say, she’s a royal after our own heart.
