When it comes to simple weeknight dinners, we always aim for maximum convenience and flavor…along with minimal cleanup. Here are seven one-pot meals to treat yourself to this week that take it easy on your kitchen sink.

One 28-ounce can white beans
Three 32-ounce cartons chicken broth
One 28-ounce fire-roasted diced tomatoes
One 15-ounce can black beans
One 32-ounce carton vegetable broth
8 ounces French or green lentils
One four-ounce can green chiles
Pantry Ingredients: extra-virgin olive oil, paprika, coriander, kosher salt, freshly ground black pepper, vegetable oil, avocado oil, chili powder, ground cumin, chipotle chili powder, rice vinegar, garlic powder, all-purpose flour
Monday: Tomato and White Bean Stew on Toast
Homemade beans are delicious—but canned beans are a total lifesaver when you’re short on time. Pair with a small green salad and voilà.
Tuesday: One-Pot Chicken Alfredo
If you want to lighten up this delightfully decadent meal just a tad (fiiine), use skim milk in place of heavy cream.
Wednesday: Cauliflower Chili
Cauliflower and sweet potato stand in for meat, while black beans, corn, cheddar cheese and sour cream simply gild the lily.
Thursday: Buddha Bowl with Kale, Avocado, Orange and Wild Rice
Egg, pepitas, pomegranate, oh my! This grain bowl (and um, every grain bowl) is all about the toppings.
Friday: Easy One-Pot Lentil Kielbasa Soup
Psst: The longer the soup gets to sit before it’s served, the more flavorful it’ll be. So, feel free to make it a few days ahead.
Sunday: Jalapeño-Avocado Mac and Cheese
The cheese sauce is partially made in the blender or food processor, resulting in a silky, uber-smooth final product.
