Is it just us or is it so fascinating to read about what someone else eats in a day? Thankfully, PureWow Coterie member Katie Willcox was happy to oblige our snooping. A model turned beauty activist, Katie talks all things wellness on her blog Healthy Is the New Skinny. Here’s how she fuels her body on a typical day, from mouthwatering breakfast ideas to hilariously relatable baking fails.

9:30 A.m.

“I usually sit down to eat breakfast after I’ve gotten my daughter, True, up and dressed for the day. I’m a vegetarian and have recently been looking for new ways to challenge my cooking skills. One quick and easy meal my husband and I go for when we’re starving is a microwaved sweet potato and scrambled eggs with half an avocado and sunflower seeds as a garnish. I love coffee and have one every morning with breakfast.”

1:00 P.m.

“I made the best sweet potato soup recently and got creative in the kitchen for lunch by using my leftover soup as a sauce for zoodles. I roasted some cauliflower and broccoli in olive oil, salt and pepper and added that mixture to my zoodle concoction—so good. Because I eat a lot of veggies I don't really worry about portion size. I eat when I’m hungry and stop when I’m full.”

4:00 P.m.

“My husband and I are addicted to Starbucks and we make at least one run per day—preferably before we go to the gym. Our favorite drink is two shots of espresso over ice with one pump of mocha and a little splash of half-and-half. This time of day is also my snack time, and I’ll usually make a protein shake or grab some egg white bites at Starbucks.”

7:30 P.m.

“My husband and I have a system where he puts our daughter to bed so I can make us dinner. One meal we love is a new recipe for vegetarian paleo chili. It’s loaded with lots of nutrients from carrots, sweet potato, tomatoes, onion, garlic, roasted cauliflower and beefless beef from Trader Joe’s. I add some avocado slices on top and enjoy every bite. I love recipes like this because I have it in the fridge for easy meals for the next few days.”

9:00 P.m.

“My family loves to kick back, relax and watch TV at night, and of course we love to snack while doing that. But we have been more conscious of what we snack on and have been trying new recipes to satisfy our sweet tooth in a healthier way. I recently tried a lighter take on a caramel-chocolate-chip blondie. When you’re trying new recipes, you’re going to win some and lose some. When I made these cookies for the first time, I totally messed it up and accidentally put in a quarter cup of baking soda instead of a quarter teaspoon like the recipe asked for. But I wasn’t going to let baking soda get the best of me, and I gave it a second try. It fascinates me that these natural ingredients can make something so delicious.”
