Kate Middleton's Mom Says She's ‘Flexitarian;' Here's What It Means

Carole Middleton, mother (or should we say, mum) to duchess Kate, is getting excited to host the kids and grandkids this year for Christmas. Case in point: She’s already thinking about the menu.

In her first-ever interview, Middleton, 63, revealed she’s playing hostess to daughter Kate Middleton, Prince William and their three children for Christmas this year (the Cambridges are expected to skip Sandringham with the queen and opting to spend time at Granny Middleton’s Berkshire home, instead).

Carole, mother of three and grandmother of four, told The Telegraph she’s going to serve vegan and non-vegan options for the royals’ holiday feast this year, since she herself has recently changed her diet. 

“I’ve recently gone vegan. Or maybe that should be flexitarian,” she said. But what is “flexitarian,” you ask? 

“If I go to someone’s house for dinner, I’m not going to make a fuss,” Carole continued, meaning she’s mostly vegan, but not when it’s impolite to tell your host you can’t eat what’s on the menu. Smart.

“For Christmas, I’d probably have two options—very traditional and something vegan.” Carole went on to say she plans to serve smoked salmon and Champagne for lunch before a full Christmas dinner.

Sounds amazing, Carole (or can we call you “Mum”?).
