7 Whole30 Dinner Recipes to Get You Through the Week
All the taste, none of the guilt
For the uninitiated, the Whole30 diet is a month-long clean eating program that aims to better your relationship with food, restart your metabolism and up your energy levels. But despite the word “diet,” there are actually a ton of really mouthwatering options. To illustrate, we’ve planned out a week’s worth of dinners on the program.
Monday: warm Brussels Sprout Salad With roots, radishes & toasted coconut
So you overindulged a little this weekend. Yes, it’s possible--and OK--to overindulge, even on Whole30. Get back on track with a salad that’s both healthy and delicious. And can we talk about how beautiful these colors are for a sec?
Tuesday: Fish Taco Bowls
Hellooo, just because you’re eating righteously doesn’t mean you have to sit out Taco Tuesday. But instead of oily taco shells and loads of cheddar cheese and sour cream, opt for this ultra-fresh fish taco bowl packed with veggies and served with a heaping spoonful of guac.
Wednesday: sausage and sweet potato soup with kale
Done in just 40 minutes, this hearty soup leaves you feeling satisfied but not stuffed, and tastes just as good cold as it does hot, making it ideal for next-day lunch leftovers.
Thursday: Chicken Piccata
Season your cast irons, ladies and gents, because it’s one-pan dinnertime. This chicken piccata is tangy and lemony and super tender. It would also be great served alongside some spaghetti squash, but that’s just our take.
Friday: Thai Coconut Curry Turkey Meatballs
It’s the end of the workweek and you deserve something indulgent (or at least something that seems indulgent). Perfectly seasoned turkey meatballs drowning in a creamy coconut curry are deceptively simple to prepare, and, if we do say so ourselves, are best served over a bed of cauliflower rice.
Saturday: Grilled Lamb With Haricot Verts and Coconut Milk
You might not have the time during the week, so Saturday’s your chance to fire up the grill and eat al fresco. Lamb is grilled to perfection and served simply with subtly sweet green beans atop a creamy coconut milk broth that’s a little bit spicy and a lot memorable.
Sunday: Sweet Potato Spaghetti with Bolognese Sauce
It’s basically a law that Sunday dinners should be comforting and hearty. Think: your favorite pasta dish without all of the carbs. Sweet potato noodles are topped with a rich Bolognese sauce that simmers all day long in a slow cooker, and your weekend is off to an excellent start.
