Tuesday: Fish Taco Bowls
Hellooo, just because you’re eating righteously doesn’t mean you have to sit out Taco Tuesday. But instead of oily taco shells and loads of cheddar cheese and sour cream, opt for this ultra-fresh fish taco bowl packed with veggies and served with a heaping spoonful of guac.

Thursday: Chicken Piccata
Season your cast irons, ladies and gents, because it’s one-pan dinnertime. This chicken piccata is tangy and lemony and super tender. It would also be great served alongside some spaghetti squash, but that’s just our take.

You might not have the time during the week, so Saturday’s your chance to fire up the grill and eat al fresco. Lamb is grilled to perfection and served simply with subtly sweet green beans atop a creamy coconut milk broth that’s a little bit spicy and a lot memorable.
Sunday: Sweet Potato Spaghetti With Bolognese Sauce
It’s basically a law that Sunday dinners should be comforting and hearty. Think: your favorite pasta dish without all of the carbs. Sweet potato noodles are topped with a rich Bolognese sauce that simmers all day long in a slow cooker, and your weekend is off to an excellent start.
