Get in the Halloween Spirit Early with Disney’s Pumpkin Pancakes Recipe

Halloween is a *big* deal at Disney parks. We’re talking autumnal Mickey decorations, spooky fireworks, live shows (hello, Sanderson Sisters), an over-the-top parade and trick-or-treating. May 15 marked the halfway point to Halloween, which the Disney Parks Blog celebrated with a virtual celebration chock-full of DIY projects and devilishly delicious recipes, like these drool-worthy pumpkin pancakes.

Picture digging into fluffy, golden-brown pancakes spiked with creamy canned pumpkin. Top it off with lots of butter and syrup (or icing, if you're feeling extra) and you’re in business for a scary delicious breakfast. Hungry for more Halloween treats? Disney also released recipes for its pumpkin twists, Jack Skellington sugar cookies, pumpkin soup, pumpkin bars and pumpkin crème brûlée.

Ingredients

  • 1 cup whole milk
  • 1 egg
  • 2 tablespoons butter, melted
  • 1/3 cup canned pumpkin
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground cloves

Step One: Combine milk, egg, melted butter, pumpkin and vanilla extract in a small bowl. Set aside.

Step Two: Whisk flour, sugar, baking powder, cinnamon, ginger, nutmeg, salt and cloves in a medium bowl. Fold wet ingredients into flour mixture.

Step Three: Heat a lightly-oiled large skillet or griddle over medium heat until hot. Add ¼-cup scoops of pancake batter onto griddle. Cook for 3 minutes on each side or until golden brown.
