Ina Garten's Easy Leftovers Hack Just Cured Our Lunchtime Rut

Aside from making us feel super accomplished, meal prep is a lifesaver for making low-maintenance lunches. But is it just us, or does eating the same batch of chili start to get a little stale after the third day? Leave it to Ina Garten to offer a solution that’s as effortless as it is delicious. Introducing the lunch leftover two-fer.

The contessa shared on Instagram, “I love a nice two-fer. I make a big batch of something and use the leftovers to make a second, completely different recipe the next day. This Tomato & Eggplant Soup is a hearty winter lunch, and I use the leftover soup as a sauce for delicious Baked Pasta with Tomatoes and Eggplant. No one will even know they’re eating leftovers!!!”

Transforming Tuesday’s sad leftovers into something bright, shiny and new? We wish we had thought of this first.
