Whole Foods Now Has Cauliflower Mac and Cheese and We'll Take 17 Boxes, Please and Thank You

Another day, another healthier take on one of our all-time favorite comfort foods. 

This time, it’s Whole Foods coming through with a less indulgent mac and cheese. What’s the secret? Glad you asked. It’s cauliflower, friends. 

Yep, made by Ark Foods, this mac is made with fresh cauliflower florets with cashew cheddar. Each single-serve package has 140 calories, 3.5 grams of fat, 16 grams of carbs and seven grams of protein. 

You bet your bottom dollar it’s vegan, and you bet your bottom dollar we’ll justify eating more than one serving.

Oh, and did we mention you don’t even have to turn on the stove to enjoy it? The single-serve packages are microwaveable, baby. Just peel back the film, remove the cheese sauce packet, cook it in the micro, add the sauce and scarf it down faster than you can say cruciferous vegetable.

For our spicy food-loving pals, Ark Foods also makes a jalapeño cheddar version which, according to the brand, has “just a touch of heat.”
