Kale Salad with Almonds, Quinoa, Golden Raisins and Turmeric Dressing

Say goodbye to sad salads with this hearty, flavorful rendition. It includes protein-rich quinoa and sliced almonds, so it’s great as a side dish, but also satisfying enough to enjoy on its own. Ingredients

1 cup Simple Truth Organic Quinoa

½ tablespoon Simple Truth Ginger Paste

Zest and juice of 1 Simple Truth Organic Lemon

¾ cup Simple Truth Organic Whole Carrots

½ cup golden raisins

½ cup Simple Truth Sliced Almonds

Simple Truth Organic Ground Black Pepper (optional)

Directions

Rinse and prepare the quinoa according to package instructions. Once cooked, fluff it with a fork, stirring in the ginger paste, lemon juice and half of the lemon zest.

In a large bowl, combine the quinoa, Simple Truth Organic Baby Kale, carrots, golden raisins, almonds and Simple Truth Organic Lemon Turmeric Dressing, tossing to coat.

Refrigerate at least 30 minutes to allow the flavors to meld. When ready to eat, divide into serving bowls and top with the remaining lemon zest and season with black pepper, if desired. The kale salad will keep in a sealed container in the fridge for up to two days.
