How to Make Homemade Gnocchi with Only 3 Ingredients

We already taught you how to make a fancy spaghetti dinner and how to break out of your marinara sauce rut. Now prepare yourself for homemade gnocchi.
These light and fluffy pillows of goodness seem like they’d be challenging to make, but they’re deceptively easy. All you need are three ingredients: potatoes, eggs and flour.
Step 1
Boil 2 pounds of russet potatoes until tender. Mash them up, then let them cool so you can handle.
Step 2
Make a well in the center of the mashed potatoes. Add 2 large egg yolks and mix into the potatoes by hand. Then add flour until the dough starts to hold its shape.
Step 3
Roll the dough into logs and cut them into ½ inch pieces.
Step 4
In a large pot, boil water. Once it's bubbling, add the gnocchi. The gnocchi will cook quickly. You’ll know they’re done once they float to the surface.
Step 5
Drain those babies, top with your favorite pasta sauce and voilà!
