What Lauryn Evarts of ‘The Skinny Confidential' Eats in a Day to Look (and Feel) Fabulous

Call us nosy, but we love getting an inside peek at other people’s day-to-day eating habits. Luckily, PureWow Coterie member Lauryn Evarts loves sharing everything about her life on her popular website, The Skinny Confidential, and was more than happy to indulge us. (It’s a match made in internet heaven.) Here’s what Lauryn eats in a typical day to look and feel amazing. Hint: It includes wine. And chocolate.

7:30 A.m.

“I’m not the best at eating right when I get up. So I’ll usually wake up around 7:30 and then immediately just have lemon water. Then I sip organic peppermint tea, which I love to drink all day. Sometimes I even just a put bunch of mint in hot water.”

9:00 A.m.

Now I’m ready to eat. I’ll typically have three eggs with three or four GG Scandinavian Bran Crispbread crackers. Tanya Zuckerbrot (a nutritionist and the creator of the F-Factor Diet) told me about these. They’re filled with fiber, so they’re great for getting everything going. You can do anything with these crackers—you can top them with lox, cream cheese and capers, or even do French toast with berries (above). With my breakfast, I’ll usually have a shot of espresso with a sprinkle of cinnamon—it balances your blood sugar and makes the coffee taste amazing.”

11 A.m.

“I don’t normally snack between breakfast and lunch because I’m so busy. But I do have another peppermint tea around this time, and sometimes a Spark pink lemonade energy drink over ice. It’s so good and wakes me right up. It’s pretty much replaced coffee for me.”

2 P.m.

“I love having a big salad with arugula, shredded carrots, avocado, oil and vinegar, so I get my greens and fiber. Sometimes I’ll put mozzarella and Rao’s tomato sauce on top of more of my favorite GG crackers and do little pizzas. I’m not the biggest meat eater—I stopped eating meat a few months ago and I feel really great, so I usually get my protein from things like Greek yogurt, cottage cheese and eggs.”

5 P.m.

“If I have time, I love to make a green smoothie with collagen powder, fiber, a healthy fat [like raw almond butter], greens and protein. I try to combine those elements in everything I eat. But when you’re go-go-go and sharing your life for a living, you do forget to eat sometimes. A lot of times I’ll end up overly hungry at dinner, so remembering to eat on time and to eat between meals is something I need to work on.”

7:30 P.m.

“Lately, I’ve been loving the Riced Cauliflower Stir-Fry from Trader Joe’s. I throw three eggs in there (yep, even if I’ve had eggs for breakfast—I don’t know what a dietitian would say about this, but I love my eggs). Lately, I’ve also been loving zoodles with marinara sauce on top, and I’ll do another salad. And if I feel like I haven’t gotten enough greens for the day, I’ll also have a celery juice with kale and lemon, with collagen and probiotics added in.”

9:00 P.m.

“I either have dessert or wine every single night. Last night, I didn’t have wine, so I had a handful of dairy-free chocolate chips. I’ve always looked at balancing my diet like a checkbook. So if I’m eating a brownie at dinner, the next morning I’ll have a really nutritious breakfast. I try not to let one ‘bad’ choice ruin my entire day.”
