We reached out to Jessica Randhawa, recipe developer & head chef at The Forked Spoon, to uncover the vegetables that last the longest. Here, a list of the hardiest veggies around.
1. BUTTERNUT SQUASH
Packed with powerful antioxidants, these guys can last 2-3 months on the kitchen counter, & a whopping 6 months when stored in a cool, dry pantry.

2. PUMPKIN
An uncut pumpkin can last a full 2 months on a cool, dry countertop, so if you snag one at the farmer’s market you’ll have plenty of time to put it to use.

3. GARLIC
You rarely have to worry about garlic going bad. When stored somewhere cool, dark and dry, garlic can last up to 6 months.

4. ONIONS
Store your onions in a dark, dry place with decent airflow, so they stay fresh for over a month.

5. SWEET POTATOES
These guys will stay fresh for over 5 months when placed in a brown paper bag & stored somewhere that’s cool, dark and dry. (Think: closet or pantry.)
