Seasonal Green Garlic Focaccia with Boursin Cheese

This super simple focaccia bread can be put together in just 30 minutes with only ten minutes of prep time, and it makes for a perfect picnic meal. The doughy bread is topped with flavorful Boursin® Garlic & Fine Herbs Cheese, sautéed scallions, garlic and crushed red pepper. Simply cut it into squares and eat it warm or at room temperature.

Ingredients

1 focaccia (homemade or store-bought)

2 tablespoons extra-virgin olive oil, divided

1 bunch scallions, ramps or garlic scapes, chopped (about 1½ cups)

1 garlic clove, minced

¼ teaspoon crushed red pepper flakes

Kosher salt and freshly ground black pepper, to taste

Directions

1. Preheat the oven to 375°F. Place the focaccia on a baking sheet and drizzle with 1 tablespoon of the olive oil. Cover lightly with foil and bake until warmed through, 7 to 9 minutes.

2. While the focaccia is baking, heat the remaining tablespoon of olive oil in a medium skillet over medium-high heat. Add the scallions and garlic, and sauté until softened and slightly golden. Season with the red pepper flakes and salt and pepper. Remove from the heat. Increase the oven temperature to 425°F.

3. Unwrap the focaccia, top with the scallion-garlic mixture and sprinkle with half of the Boursin Cheese. Return to the oven and bake until golden and crisped, 10 to 12 minutes. Remove from oven and top with the remaining Boursin Cheese before cutting into squares and serving warm or at room temperature.
