Why are spritzers exclusively reserved for the summertime? We want to be refreshed all winter long, dammit. Meet the ruby vermouth spritzer. It starts with an aperitif wine called red vermouth, a sweeter cousin of the dry variety used in martinis. We love Martini & Rossi's version, available at most liquor stores, for its Italian Nebbiolo wine base and balanced spicy-herbal finish. Next, dump in a can of seltzer and—prego—you're basically done. (Take that, Aperol).


Ingredients

Ice, for serving

16 ounces red vermouth, such as Martini & Rossi Riserva Speciale Rubino

2 dashes Angostura bitters

Seltzer, for serving

8 red grapefruit wheels, for serving

8 sprigs rosemary, for serving

Directions

1. Fill eight highball glasses with ice. Pour 2 ounces of vermouth into each glass. Top with bitters and seltzer.

2. Gently stir and garnish each glass with a grapefruit wheel and rosemary sprig.
